


Jalisco Valley Lowlands
Casa Azul resides in the valley lowlands of Jalisco, Mexico or “El Valle” in a small town called Amatitán. Agaves are planted in mineral-rich, dark volcanic soil or “Tierra Negra” which gives them their distinct character and depth.



Organic Agave
We grow our own USDA certified organic agave for 6-7 years until fully mature. The heart of the plant, the piña, is then harvested by hand, trimmed, and cut in half with a traditional coa knife in preparation for the roasting process.



Slow Cooked
Our agave piñas are roasted low and slow in a traditional stone oven for 2-3 days to create complexity and consistency in flavor. The result is the purest expression of the Blue Weber Agave plant, allowing its natural flavors to shine without any additives.



Roller Mill Extraction
After slow roasting to perfection, the cooked agave piñas are crushed by large rollers to separate the fibers and extract the juice needed for fermentation. This process is a delicate balance between tradition and technology.



Wild Yeast Fermentation
The extracted agave juice undergoes natural open-top fermentation utilizing wild yeast for 2-3 days. This process allows the wild yeast to introduce rich and complex flavors that contribute to the organic tequila's distinct profile.



Twice Distilled & Rested
After fermenting, the organic tequila is twice distilled in stainless steel stills with copper coils to ensure purity. It is then rested for two months, allowing it to aerate naturally for a smoother, softer profile before the aging process.



Natural Spring Water
After the second distillation, the organic tequila is enriched with pure spring water from 885 feet below ground. This water carries the essence of the earth’s minerals, complementing the tequila with subtle, natural notes that reflect the land from which both the agave and water originate.



Aged in American Oak
In the final step of our process, the Reposado and Añejo expressions are aged to perfection in American Oak Bourbon casks, imparting rich notes of vanilla, caramel, and spice. This time-honored tradition yields a tequila free of additives, where the rich flavors of oak harmoniously blend with the true character of agave.
